This is a very simple recipe that is a family favourite. This recipe uses simple ingredients and is very quick and easy to bake. It produces 18 muffins which you will find will soon disappear.
Ingredients
- 2 ¼ Cups all-purpose flour
- 1 ½ tsp. baking soda
- 1 tsp. ground ginger
- ¼ tsp. salt
- ¾ tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. ground cloves
- 1 Cup packed brown sugar
- 1 Cup pureed pumpkin (home made or canned, NOT pumpkin pie filling)
- 1/3 Cup buttermilk
- 1/3 Cup canola oil
- ¼ Cup molasses
- 1 tsp. vanilla extract
- 2 lg. eggs
- cooking spray
- 2 Tbsp. granulated sugar
Method
Preheat oven to 400º
Lightly spoon flour into dry measuring cup; level with a knife. Combine flour through cloves in a medium bowl. Whisk to combine. In another bowl, combine brown sugar through eggs, stir well with a whisk. Add sugar mixture to flour mixture; stir just until moist.
Spoon batter into 18 muffin cups coated with cooking spray. Sprinkle with granulated sugar. Bake at 400º for 15 min. until a wooden toothpick inserted into centre comes out clean. Remove muffins from pans and cool or wire rack.
